Najbardziej zwi\u0105zane jest z jej stolic\u0105, czyli Palermo, cho\u0107 mo\u017cemy je bez trudu znale\u017a\u0107 tak\u017ce w innych cz\u0119\u015bciach Sycylii.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p class=\"wp-block-paragraph\">Mia\u0142em okazj\u0119 spr\u00f3bowa\u0107 tej potrawy podczas mojego pobytu na Sycylii, a teraz postanowi\u0142em j\u0105 odtworzy\u0107 w swojej w\u0142asnej kuchni. Efekt okaza\u0142 si\u0119 bardzo smaczny, mog\u0119 powiedzie\u0107, ze zbli\u017cony do orygina\u0142u,  jednak prawdziwych sycylijskich smak\u00f3w, tamtejszych \u015bwie\u017cych,  doskona\u0142ej jako\u015bci produkt\u00f3w, nie da si\u0119 niczym zast\u0105pi\u0107. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pasta con le sarde to, jak sama nazwa wskazuje, danie na bazie makaronu. U\u017cywa si\u0119 r\u00f3\u017cnego rodzaju pasty, ale bucatini jest najbardziej tradycyjn\u0105 opcj\u0105. Do tego dochodz\u0105 \u015bwie\u017ce sardynki, anchois, dziki koper w\u0142oski, szafran, orzeszki piniowe, rodzynki. Sycylijczycy dorzucaj\u0105 te\u017c czasem ich \u015bwietne migda\u0142y, a  gotowy makaron posypuje si\u0119 bu\u0142k\u0105 tart\u0105 lub mielonymi migda\u0142ami. W razie braku \u015bwie\u017cych sardynek mo\u017cna zast\u0105pi\u0107 je dobrej jako\u015bci sardynkami w puszce.  Podobnie z dzikim koprem w\u0142oskim &#8211; na Sycylii jest go ca\u0142e mn\u00f3stwo, ale bez problemu mo\u017cemy u\u017cy\u0107 tego zwyk\u0142ego, kt\u00f3ry dost\u0119pny jest u nas. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pasta con le sarde to jedna z kulinarnych wizyt\u00f3wek Sycylii. \u0141\u0105czy w sobie produkty, z kt\u00f3rych wyspa s\u0142ynie &#8211; m.in. sardynki, koper w\u0142oski, migda\u0142y. Kilka naj\u015bwie\u017cszych i najwy\u017cszej jako\u015bci sk\u0142adnik\u00f3w potrafi zamieni\u0107 zwyk\u0142y makaron w prawdziwie wyj\u0105tkowe danie. W najlepszym wydaniu mo\u017cecie go spr\u00f3bowa\u0107 tylko na Sycylii. Rodzynki namoczy\u0107 we wrz\u0105tku przez 5 minut. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Je\u017celi dysponujemy koprem w\u0142oskim wraz z jego li\u015b\u0107mi, ugotujmy te li\u015bcie w osolonym wrz\u0105tku przez 15 minut. Nast\u0119pnie nale\u017cy wyj\u0105c li\u015bcie zachowuj\u0105c wod\u0119 z ich gotowania, w kt\u00f3rej p\u00f3\u017aniej ugotujemy makaron. W garnku rozgrza\u0107 oliw\u0119 i przesma\u017cy\u0107 drobno posiekan\u0105 cebule. W tym czasie drobno posieka\u0107 bulw\u0119 kopru w\u0142oskiego.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Po chwili  doda\u0107 posiekany koper w\u0142oski i sma\u017cy\u0107 wraz z cebul\u0105 na wi\u0119kszym ogniu przez kilka minut. Doda\u0107 anchois i zmia\u017cd\u017cy\u0107 je nieco widelcem. Dobrze wymiesza\u0107 i dorzuci\u0107 orzeszki piniowe i ods\u0105czone rodzynki. Do garnka wrzuci\u0107 \u015bwie\u017ce sardynki i sma\u017cy\u0107 kilka minut ci\u0105gle mieszaj\u0105c, a\u017c sardynki przybior\u0105 posta\u0107 lekkiej pulpy i wymieszaj\u0105 si\u0119 z pozosta\u0142ymi sk\u0142adnikami. Posiekaj li\u015bcie kopru w\u0142oskiego ( je\u015bli ich u\u017cywasz ) i dodaj do ca\u0142o\u015bci kiedy sardynki b\u0119d\u0105 ju\u017c ugotowane.  Dopraw do smaku sol\u0105, pieprzem i dodaj szafran namoczony w \u0142y\u017cce gor\u0105cej wody. Podgrzewaj  wszystko jeszcze przez minut\u0119. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Bucatini ugotuj al dente w wodzie, w kt\u00f3rej wcze\u015bniej gotowa\u0142y si\u0119 li\u015bcie kopru w\u0142oskiego ( je\u015bli nie u\u017cywa\u0142e\u015b li\u015bci, to po prostu ugotuj makaron w osolonym wrz\u0105tku ). Odced\u017a makaron, dodaj do sosu i podgrzej ca\u0142o\u015b\u0107 mieszaj\u0105c przez minut\u0119. Na ko\u0144cu posyp danie mielonymi migda\u0142ami. W tym momencie mo\u017cesz poda\u0107 potraw\u0119 lub w\u0142o\u017cy\u0107 garnek z makaronem na 5 minut do nagrzanego piekarnika, aby mielone migda\u0142y \u0142adnie si\u0119 przyrumieni\u0142y.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pasta con le sarde jako tradycyjna, sycylijska specjalno\u015b\u0107, a\u017c prosi si\u0119 o sycylijskie wino. Zasada regionalno\u015bci sprawdza si\u0119 tutaj doskonale, gdy\u017c do takiego makaronu idealnie pasuje <strong>Grillo, Catarratto czy wytrawny Zibibbo<\/strong> ( Muskat Aleksandryjski ).  Niestety bia\u0142e sycylijskie wina ju\u017c dawno wypi\u0142em ?, wi\u0119c si\u0119gn\u0105\u0142em po co\u015b innego, ale r\u00f3wnie dobrze pasuj\u0105cego do pasta con le sarde. Wybra\u0142em <strong>Verdejo<\/strong> z <strong>Ruedy<\/strong>, kt\u00f3re bardzo dobrze radzi sobie z tego typu smakami. Sardynki, koper w\u0142oski, migda\u0142y, rodzynki &#8211; to \u015bwietne zestawienie dla Verdejo o cytrusowych, ale te\u017c pikantno-zio\u0142owych i mineralnych nutach, kt\u00f3remu nie brakuje r\u00f3wnie\u017c nieco wi\u0119cej cia\u0142a. Wam te\u017c polecam takie po\u0142\u0105czenie, cho\u0107 rodowici Sycylijczycy, delikatnie m\u00f3wi\u0105c, obraziliby si\u0119 na mnie, gdybym zaproponowa\u0142 sparowanie ich tradycyjnej pasty z innym ni\u017c sycylijskie winem. Ale dobrze ich rozumiem ?<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">O tym konkretnym Verdejo, kt\u00f3re wypi\u0142em do tej potrawy napisz\u0119 w oddzielnym wpisie.<\/p>\n\n\n\n<div
