Wszystkie sk\u0142adniki umieszczamy w du\u017cym garnku i powoli doprowadzamy do wrzenia. Gotujemy chwil\u0119 na mocnym ogniu, nast\u0119pnie zmniejszamy p\u0142omie\u0144 i gotujemy wywar przez oko\u0142o 2 &#8211; 2,5 godziny. Doprawiamy do smaku sol\u0105 i pieprzem, odcedzamy i odstawiamy na bok.<\/p>\n\n\n\n<p>Z m\u0105ki, jajek i odrobiny soli wyrabiamy ciasto. Mo\u017cemy zrobi\u0107 to r\u0119cznie lub pos\u0142u\u017cy\u0107 si\u0119 malakserem ( w razie potrzeby doda\u0107 odrobine wody ). Gotowe ciasto powinno by\u0107 mi\u0119kkie i elastyczne. Formujemy je w kul\u0119, sp\u0142aszczamy nieco, zawijamy w foli\u0119 spo\u017cywcz\u0105 i wk\u0142adamy na 30 minut do lod\u00f3wki. <\/p>\n\n\n\n<p>Na patelni rozpuszczamy mas\u0142o. Wrzucamy posiekan\u0105 pol\u0119dwiczk\u0119 wieprzow\u0105 i rumienimy na \u015brednim ogniu. Mi\u0119so zdejmujemy z patelki i \u0142\u0105czymy z prosciutto oraz mortadel\u0105 ( siekamy ca\u0142o\u015b\u0107 jeszcze drobniej lub mo\u017cna te\u017c zmiksowa\u0107 wszystko ). Dodajemy parmezan, jajka, s\u00f3l, pieprz, ga\u0142k\u0119 muszkato\u0142ow\u0105 do smaku.<\/p>\n\n\n\n<p>Ciasto dzielimy na trzy cz\u0119\u015bci. Je\u017celi mamy maszynk\u0119 do makaronu, to przepuszczamy przez ni\u0105 porcje ciasta zaczynaj\u0105c od najgrubszego ustawienia, a\u017c do cienkiego. Je\u015bli nie dysponujemy maszynk\u0105, wa\u0142kujemy ciasto tak cienko, jak si\u0119 da. P\u0142aty ciasta kroimy na 4-centymetrowe kwadraty. Na ka\u017cdym kwadraciku umieszczamy porcj\u0119 nadzienia ( 1 \u0142y\u017ceczk\u0119 ) i formujemy tortellini. <\/p>\n\n\n\n<p>Podgrzewamy wywar do momentu wrzenia. Wrzucamy do niego tortellini i gotujemy mniej wi\u0119cej minut\u0119. Tortellini i wywar rozdzielamy do misek\/g\u0142\u0119bokich talerzy i posypujemy startym parmezanem.<\/p>\n\n\n\n<p>Tortellini in brodo mo\u017cemy poda\u0107 z <strong>wytrawnym lambrusco,
